The Organic Swiss Water Process is a chemical-free method used to decaffeinate coffee beans while preserving their flavor and maintaining organic certification. This gentle, environmentally friendly technique ensures that the rich taste and quality of the beans remain intact. Here’s a closer look at how the process works:
Preparation - Bean Bath The process begins with the coffee beans being soaked in hot water. This water extracts both the caffeine and other soluble compounds, which include flavor elements.
The Green Coffee Extract (GCE) - Flavor Infusion The water that has been infused with the coffee’s flavors and caffeine is then passed through a carbon filter. This filter is designed to capture caffeine molecules while allowing the remaining flavor compounds to pass through. The result is a solution called Green Coffee Extract (GCE) that is rich in coffee flavors but free from caffeine.
Re-Soaking the Beans - Another Bean Bath New batches of green coffee beans are then soaked in the GCE. Since the GCE is already saturated with coffee flavors, only the caffeine is extracted from these new beans. The beans are left in the GCE until they are fully decaffeinated.
Drying and Restoring - Let it dry Once the beans are decaffeinated, they are dried to remove any residual moisture. The beans are then roasted and processed just like regular coffee beans.
